Pearse Lyons Distillery

Discover fascinating local history, compelling characters and, of course, the signature Pearse Irish Whiskey at Dublin’s only boutique distillery. Pearse Lyons Distillery at St. James Church was founded by Pearse and Deirdre Lyons. Pearse Lyons descended from five generations of coopers who supplied barrels to many of Dublin’s distilleries. He had a personal passion for brewing and distilling, an entrepreneurial spirit and a deep-rooted family connection with The Liberties. You are invited to come and enjoy the unique experience of a real working distillery in a Church. The guided tours are hosted by friendly storytellers, who will regale you with intriguing tales dating back to the 12th Century. The Distillery Tours run every hour on the hour and are small in size so that you can enjoy a more personal experience. You will try 3, 4 or 5 of the Pearse Irish whiskeys, depending on the type of tour you select. You will explore the distillery and graveyard, and learn about the history of St. James Church, the one with the glass steeple. The beautiful stained glass windows were custom-made to reflect aspects of the whiskey making process. The team at Pearse Lyons Distillery have created four tailored experiences to suit all interests: the Private Distillery Tour, the Cocktail Masterclass Experience, the VIP Food Pairing Experience and the Art of Whiskey Distilling. (Book online in advance.) Plans are in place for a 2-hour Gin School where you create your own gin with your choice of botanical additions, and bring home your own bottle. The Tea Room at the Distillery is a lovely tranquil spot. The Afternoon Tea Experience takes place on the last Saturday of each month, unless otherwise stated. This experience takes approximately two and a half hours and includes a fully-guided tour after your tea where you sample 5 award-winning whiskeys.
